We had some friends over for an outdoor taco dinner a few weeks ago, and I wanted a super seasonal, light, fun dessert. I decided to let the incredibly sweet and in-season peaches, watermelon, and berries from the farmers market shine by serving them alongside a cardamom whipped cream. I gave the fruit a sprinkle of flake salt, and also added a small bowl of chopped dark chocolate to the platter. Everyone made their own fruit / cream / chocolate situation and it was divine. This is definitely the simple dessert I’ll be having on repeat this summer!
Salted Summer Fruit with Cardamom Whipped Cream + Dark Chocolate
gather //
+ half a watermelon, chopped into pieces
+ two peaches, sliced
+ one nectarine, sliced
+ half cup blackberries
+ any other fruit or berries!
+ sprinkle of flake salt
+ 1 cup heavy whipping cream
+ 1/2 teaspoon ground cardamom
+ 1/2 teaspoon vanilla extract
+ pinch of Kosher salt
+ 1 bar of nice dark chocolate

Arrange your fruit on a large platter.
Chop the dark chocolate bar and add it to a small bowl on the platter.
Whip your cream. Add the heavy cream (it should be cold!) to the bowl of a mixer. Whisk on high for 3 minutes. Add the cardamom, vanilla, and Kosher salt and whip for another 2 or 3 minutes, until soft peaks form. Transfer to a bowl to serve alongside the fruit platter.
Sprinkle flake salt over the fruit before serving!
